How the line differs, model by model
Measure the space, then take an inch off each side. A mat that fights the cabinet walls curls at the edge and stops sitting flat, and a curled lip pours instead of catching.
The 19 by 12 inch mat is the everyday one: pet bowls, a coffee machine, a small vanity. The 34 by 22 and 40 by 22 sizes are made for the floor of a full-width sink cabinet.
Colour is a practical choice as well as a taste. Grey and beige hide dust, black hides everything until you rinse it, white shows a leak the day it starts.

Is it really food grade?
The material is food-grade silicone, and that phrase describes what the silicone is. The packaging that arrives with the mat carries the legal labelling, which is the document to read if a specification matters to you.
Will it hold a whole bottle of detergent?
It holds a spill, not a flood. The lip is there to keep a leak off the cabinet floor while you notice it, which is usually the day after it starts.
Does it smell?
New silicone can carry a faint smell for a day or two. A dishwasher cycle or a rinse and an afternoon of air deals with it.
Can I cut it to fit around a pipe?
You can, with a sharp blade and a steady hand, and it will not tear afterwards. We would try the next size down first.
A leak under a sink is boring until it reaches the chipboard. The mat is the cheapest way to find out about it early.
